ZUCCHINI AND HERBS COLD SUMMER SOUP
Ingredients
3 shallots, finely chopped
3 zucchinis, chopped in 1 inch slices
1 tbsp butter
1 chicken bouillon cube Knorr
2 ½ cups of water
1/3 of a herb Boursin cheese
Fresh chopped Chives
Pepper
Taste before you add salt as the chicken bouillon cube is very salty.
Method
In a small Dutch oven add the butter and the shallots,
Cook the shallots on low heat until tender,
Add the zucchinis ,
Sprinkle the bouillon cube on top
Add the water and simmer for 10 minutes or until tender,
When ready take off the fire.
Add the Boursin,
Blend all together to obtain a smooth texture.
Let it cool down .
Store in the fridge for a couple of hours,
