                              Gaspacho

 

This is  a very simple Gaspacho. It is  a cold tomato soup. I skipped all the bread and most of the olive oil.

 

Ingredients

20 large fresh tomatoes, peeled and  chopped
2 medium  cucumbers,  chopped
1  green bell pepper,  chopped
1 yellow bell pepper,  chopped
1 large onion , finely chopped
3 cloves of garlic , finely chopped
2 tbs. of olive oil [optional]
1/2 cup fresh chopped basil
1/2 cup of chopped flat leaves parsley. 
 A pinch of hot pepper flakes to taste or cayenne pepper, or hot sauce
salt and pepper to taste
4 tablespoon of balsamic vinegar, or to taste.
1 lime juice

  

Method

Core and peel the tomatoes  and the cucumbers

To peel the tomatoes, drop them  into a pot of boiling water for about 25 seconds.

Coarsly chop all vegetables , tomatoes, bell peppers, cucumbers.

Keep ¼ of a cup of  cucumber, onion, bell peppers finely diced for garnish,

Finely chop  herbs, basil or parsley, or marjoram, keep  aside for garnish

In a blender pour tomatoes,  cucumbers,  bell peppers,  garlic, onion.

Blend all those ingredients together . If the blender needs a little liquid to start I use tomato juice

Add the Balsamic vinegar, the lime juice, 2 tbsp of very good olive oil,

Add  hot pepper flakes or cayenne pepper or hot sauce salt and pepper to taste.

Transfer in the fridge for several hours . Serve cold with a French baguette .
